Cheesy Buffalo Rice

Today I have another lovely dinner side dish (or just dinner) to share with you. Apparently I have been in a one pot meal mood because here is another. This dinner is adapted from the recipe on  Eat Yourself Skinny. It was originally called cheesy red hot rice, and the first time I made it it was delicious, but not quite red hot enough for me…so I tweaked it. Enter Frank’s red hot buffalo wing sauce.


1/2 large onion chopped

1 1/2 cups uncooked brown rice

1 can diced tomatoes (sometimes I use original Rotel instead)

3 cups water

1/2 cup grated reduced-fat parmesan cheese

Frank’s Red Hot Buffalo Wing sauce to taste

oregano (just a couple shakes)

chili powder (just a couple shakes)

salt and pepper to taste

Saute onion in a large pot over medium heat for ~1 min. Add tomatoes, rice, water, oregano, chili powder, salt, and pepper. Stir to combine. Bring to boil. Reduce heat to simmer. Let simmer for ~30 min.

Remove from heat and let stand for ~3 minutes until remaining water is absorbed. Add parmesan cheese and buffalo sauce. Stir to combine.

This is also one of Aaron’s most requested meals. I don’t mind making it for him because it’s so easy. As far as calories go, they should be the same as the original because the only new ingredient I added was the Buffalo sauce. A tablespoon of Frank’s is 0 calories (I use more than that!). According to the original recipe the whole recipe makes 4 servings and each serving is ~138 calories.
